In Beaune, the chic bistro Loiseau des Vignes is managed by a leading name in French gastronomy: Groupe Bernard Loiseau.
Set within the hotel’s historic walls on Rue Maufoux, Loiseau des Vignes revisits Burgundian specialties. Fifteen years after its opening, the restaurant has been transformed into a chic bistro under the impetus of Bérangère Loiseau.
The restaurant is closed on Sundays and Mondays. Reservations are recommended.

In the kitchen, the new chef Alexandre Dutat offers a gourmet menu: œufs en meurette, pâté en croûte, escargots—guests savor Burgundy, its terroir, and its signature dishes.
The convivial, rooted cuisine bears the Loiseau hallmark: clear flavors, fine sauces, and exceptional products.

Guests discover what made the concept’s success: an exceptional, exclusive Burgundy selection, painstakingly curated by Éric Goettelmann, the group’s executive head sommelier and Meilleur Ouvrier de France 2019.
Four wine dispensers nestled in a magnificent oak case offer up to 32 wines by the glass (from €7 per glass). The cellar holds up to two thousand bottles of Burgundy (from €45 per bottle).
